The Culinary Landscape is Expanding…
The Santa Fe Culinary Academy is one of the Capital’s most exciting educational endeavors. Located in the heart of the historic district on the top floor of the Plaza Mercado building, the SFCA offers community cooking classes and a unique one-year Professional Culinary Program. The SFCA also hosts distinctive pop-up restaurants, a student restaurant and a one-of-a-kind event space for Santa Fe locals and out of town guests alike. Our culinary classes are designed with three distinct markets in mind; amateur/home cooks, professionals seeking further education and individuals with professional aspirations.
Community Class Program
The SFCA’s Community Classes take place in either of the two demonstration kitchens on-site. These recreational events range in length from a few hours to several days. Participants are taught and led by one of our professional chef instructors, local cookbook authors, members of the Santa Fe restaurant community and visiting celebrity chefs. Hands-on, lecture, and demonstration classes are available.
The Continuing Education for Chefs Program offers classes early in the week making them more accessible to restaurant professionals. Classes on baking, butchery, fish mongering, charcuterie, modernist techniques and more are offered. Recipes and methods will be adjusted for use in professional kitchens however we do not exclude members of the public who want to get experience working alongside the pros!
Professional Culinary Program
The Santa Fe Culinary Academy’s one-year Professional Culinary Program is housed in our state of the art, 5,000-square foot facility. Participants receive instruction in our Studio Kitchen and in the three Laboratory Kitchens. Adjacent to the four SFCA kitchens is our student restaurant, “The Guesthouse”, where participants learn key points of service, restaurant economics and fundamentals of management. Students participate in weekly externships in the kitchens of our participating community of restaurants, hotels and bakeries as well as with non-profits and farmers.
“The Guesthouse” Student Restaurant & Event Space
The SFCA is now taking reservations for upcoming ‘pop-up restaurants’ in our student restaurant The Guesthouse.
The Guesthouse is regularly transformed through the installations of our visiting chefs’ concepts. Chefs from around the globe share their culinary vision with Santa Fe and the SFCA students have the opportunity to work with and learn from some of the best.
The Guesthouse is also the students’ workshop and showcase. The offerings reflect the curriculum they are studying and change throughout the year to embrace local, seasonal products. The students transform The Guesthouse once each year as part of their final project.
The design elements featured in the construction and layout of the SFCA make it a very popular venue for private events such as wedding receptions, management retreats, corporate functions, and private parties. The entire south side and most of the east side of our facility are framed by a third floor portal with views of Atalaya Mountain as well as the Ortiz, Sandia and Jemez Mountains. The only facility of its kind in New Mexico!
We look forward to seeing the members of our community as well as national and international guests at the SFCA.
Come inside and see what’s cooking!
