The Santa Fe Culinary Academy is one of the Capital’s most exciting educational endeavors. Located in the heart of the historic district on the top floor of the Plaza Mercado building, the SFCA offers a unique one-year Professional Culinary Program and community cooking classes.
The SFCA also hosts distinctive pop-up restaurants, a student restaurant, and a one-of-a-kind event space. Our culinary classes are designed with three distinct markets in mind: individuals with professional aspirations, professionals seeking further education, and amateur/home cooks.
The Santa Fe Culinary Academy’s one-year Professional Culinary Program provides a unique curriculum, a low student to teacher ratio, and hands-on experience. Students receive instruction in everything from boot camp basics to advanced pastry, garde manger, and à la carte cookery.
The students run our student restaurant, The Guesthouse, where they execute lunch service, dinner service, and ultimately design their own restaurant concept. The students install one student-designed concept and open it to the public as well as assess its success. At The Guesthouse they learn key points of service, restaurant economics, and fundamentals of management.
Students also participate in externships in our participating community of restaurants, hotels, and bakeries, as well as local non-profits and farms and attend elective courses of their choosing.
The SFCA’s community classes are designed to provide entertainment and education, to engage our community, and to promote the joys of cooking. These recreational events range in length from a few hours to several days. Our classes are lead by a variety of teachers, such as our professional chef instructors, local cookbook authors, members of the Santa Fe restaurant community, and visiting celebrity chefs. Hands-on, lecture, and demonstration classes are available.
The SFCA is taking reservations for upcoming ‘pop-up restaurants’ in our student restaurant, The Guesthouse. Our unique pop-ups are usually held the first Thursday of each month, with some exceptions.
The Guesthouse is regularly transformed through the unique installations we create and by our visiting chefs’ concepts. Chefs from around the globe share their culinary visions with Santa Fe and the SFCA students have the opportunity to work with and learn from some of the best.
The Guesthouse is also the students’ workshop and showcase. The offerings reflect the curriculum they are studying and change throughout the year to embrace local, seasonal products. The students transform The Guesthouse once each year as part of their final project. The Guesthouse is open periodically based on the curriculum of the one-year Professional Culinary Program.
The design elements featured in the construction and layout of the SFCA make it a very popular venue for private events such as wedding receptions, management retreats, corporate functions, and private parties. The entire south side and most of the east side of our facility are framed by a third floor portal, with views of Atalaya Mountain as well as the Ortiz, Sandia, and Jemez Mountains. The SFCA is the only facility of its kind in New Mexico!
